As a freshman, he played in one game and caught a 15-yard pass before redshirting the season. This decision was motivated by his desire to transition from a wide receiver to a tight end.

His redshirt freshman season was characterized by 14 receptions for 136 yards, while his redshirt sophomore season ended with 13 catches for 154 yards and one touchdown. Initially, Baylor was his intended destination, with hopes of playing for his former coach at Temple, Matt Rhule. However, upon Rhule leaving Baylor to helm the Carolina Panthers, he reevaluated his decision and chose Ole Miss for the final lap of his collegiate journey.

It was at Ole Miss that Yeboah broke records as he set a school record for the maximum receiving yards in a single game – a whopping 181 yards on seven receptions, along with two touchdowns. He ended the season with a remarkable tally of 27 receptions for 524 yards and six touchdowns.

On December 17, 2020, Yeboah made the crucial decision to quit the remainder of the 2020 season and enter the 2021 NFL draft. This move led him to sign with the New York Jets as an undrafted free agent on May 7, 2021, and he was elevated from the practice squad to the active roster in October. His first two NFL receptions on January 2, 2022, set in motion a promising professional journey.

However, success often comes with its ups and downs. Yeboah was waived by the Jets in August 2022 but was quickly signed back to the practice squad the next day, and was promoted back to the active roster in November.
