Sims spent his high school years at Clark High School, located in San Antonio, Texas. As a senior, he asserted himself as a formidable tight end, and his performances didn’t go unnoticed. In 2022, Sims returned for his final season. He maintained his game, recording 31 receptions for 255 yards, which earned him the honorable mention all-conference and second-team All-Texas. With these exploits, he wrapped his college football career at Baylor as the team’s all-time leader in touchdowns by a tight end (12). Besides that, he had the second-most receptions (78) and the fourth-most yards (785). Following his final year, he was invited to the NFLPA Collegiate Bowl, where he scored a touchdown.

After Sims went unselected in the 2023 NFL draft, he was signed up as an undrafted free agent by the Minnesota Vikings. In the preseason, he caught three passes amounting to 53 yards, with the longest being 33 yards. However, the Minnesota Vikings decided to waive him during the final roster cuts on August 29, 2023.

Only two days later, on August 31, the Green Bay Packers claimed Sims off waivers. He scored his first touchdown receiving a pass against the Kansas City Chiefs. True to the culture of football, he celebrated with a legendary Lambeau Leap.
