The year 2021 became significant for McCoy, as it marked the beginning of his journey with the Idaho Vandals. He participated in three hard-fought games before redshirting the season, exhibiting his potential by throwing for 205 yards and a touchdown. He successfully completed 204 of 298 passes for a splendid 2,719 yards, which included 27 touchdown passes and only seven interceptions. Aside from performing excellently as a quarterback, he also infused versatility into his game by rushing for three touchdowns. Recognizing the impressive track record he had built in such a short period, he was honored as the Big Sky Conference Freshman of the Year.
